As well as having a long history with coffee, Java is also quite unique. Most coffees from this region undergo semi-washed processing (also known as wet processing). The main difference compared to other methods is that, after the cherries have been pulped, they are dried to 30–35 % moisture content, and the silver skin is then immediately removed from the coffee beans themselves. The coffee beans continue to dry until they reach 11–12 % moisture content. The result is a cleaner cup with lower acidity levels.

This coffee, sourced from the Blue Sunda Estate in West Java, is also semi-washed. It is grown in the village of Loa, Bandung, which lies at an altitude of between 1,100 and 1,300 metres. Around 500 smallholder farmers live in the area, most of whom practise organic farming and avoid the use of chemical fertilisers.
